Cajun Craft is my love letter to the Gulf Coast — fresh seafood, scratch-made everything, and that New Orleans energy that just makes you want to stay a while. I opened our doors in 2016 right here in the heart of Waco, inside a converted 1950s auto shop that somehow feels like it was always meant to feed people.
